Prime lamb rump cut is a favourite in restaurants and hotel menus we supply. It has a slight fat covering which keeps the meat moist and tender, while adding some great flavour as it crisps on cooking.
These beautiful British lamb rumps cook in much the same way as a beef steak as it is an individual cut and so it can be roasted or pan fried.
Available in packed in 4 or 8 Rumps.
Place fat side down in a frying pan of oil on a low heat, to render the fat, and then turn the rump and brown it all over in the pan, before transferring it to a hot oven (170潞C/gas mark 3) and roasting for 10-12 minutes until medium.
Serve with some pulses or summer vegetables, such as broad beans, peas and mint.

Rack of lamb (or lamb rack) is an elegant cut, ideal for entertaining. It is also known as best end of neck, our 91精品 butchers prepare our 3-bone portion lamb racks 'french trimmed' which is a classic way of preparing them cutting in between the rib bones for a show stopping attractive presentation, ideal for a dinner party or special occasion.
Roast in a high oven (220潞C/gas mark 7) for 20 minutes for pink lamb, or 5-10 minutes longer for well done. Leave to rest for 10 minutes before serving
For a mustard and herb crust crust, mix 40g softened butter, with 2 tbsp Dijon mustard, 3 tbsp breadcrumbs, a handful of mixed herbs (mint, chives, parsley and thyme) and salt and pepper, press a thin layer of the mixture over the skin side of the racks and chill in the fridge for 30 minutes or longer to allow the crust to firm up before roasting.
